LEMON HERB
BUTTERFLIED LEG OF LAMB
MAPLE BREAKFAST SAUSAGE
PIG IN A FLANKET
Ingredients
1 Flank Steak, Butterflied
1 Tablespoon Montreal Steak Seasoning
8 Ounces fresh spinach
5 - 6 Roasted red peppers
4 or 5 Rectangular slices of cheddar cheese
1 Pork tenderloin
Directions
Lay out butterflied flank steak, season with beef seasoning
Layer evenly with fresh spinach
Then layer with cheddar cheese
Another layer of spinach, press down with both hands
Next, lay out roasted red peppers evenly
Another layer of spinach
Place pork tenderloin at edge of flank steak nearest you
Then tightly roll with both hands, tucking in the loose spinach as you roll
Tie center with string first, then tie each end
Continue between each string until you have at least
2 strings on each slice of 1 1/2 to 2 inches thick, then slice
Place in baking pan
Place in 350˚ degree oven
Cook for approximately 30 minutes
Let rest for 5 minutes and serve

1 Boneless Butterflied Leg of Lamb
1/3 Cup of Lemon Herb Seasoning
Rosemary
Thyme
Salt & Pepper
MAPLE BREAKFAST SAUSAGE
Ingredients
3 Pounds pork with some fat, cubed
1 Teaspoon poultry seasoning
2 Teaspoons dried sage
1 Teaspoon dried marjoram
2 1/4 Teaspoons fine sea salt
1 1/2 Teaspoons freshly ground pepper
1/4 Cup maple syrup
2 Tablespoons dark brown sugar
